Due to my recent cold and/or sinus infection I spent the last week eating stuff that either tasted like medicine, oversalted soup or nothing at all. To celebrate the end of this week long stay in hell I decided I needed something rich. A trip to Wegmans where the tasty looking veal shanks begged to be eaten (and filet of salmon for the little lady), some mushrooms and asparagus and I was on my way. The nature of shank, and osso bucco for that matter, requires long braising time. Mine spent about 10 minutes browning in the pan and then 90 in our convection microwave/oven (cool technology by the way) but I think it could have stood a bit more time. It was damn tasty, but it wasn’t that chew with your tongue sort of tender osso bucco usually has. It really was quite fantastic for a first try and I think version 2.0 will be perfect. Bone marrow really is underappreciated these days.
