Some would argue that all year ’round is grilling season and while true, I don’t have the patience to stand around in the dark and cold waiting for a charcoal grill to heat properly. Since it was about 80° today and I left work a bit early, I stopped by Weggies to pick up some goodies for the grill. Being the lazy fu**er I am, I decided the entire meal should be prepared on the grill. From left to right we have…
- Whole grain flax, sunflower and pumpkin seed bread
- Wild Alaskan halibut with fresh lemon and cracked black pepper
- Portabello caps with pesto puree
- Duck breast with orange teriyaki glaze
This was my first time cooking duck so I probably shouldn’t have chosen a charcoal grill. The meat itself was cooked perfectly and amazingly tender, I just didn’t render the skin like they do on TV. If I cook duck again, I’ll probably score the skin more and marinate it in the OJ overnight so there’s more acidity. The mushrooms were great and using pesto meant it wasn’t dripping in butter or oil and relatively light. The fish was supposedly excellent but I didn’t have any so I can’t comment on specifics. Interestingly, I think the bread was the best part of the whole meal. The high seed content gave it a tasty smoky flavor when grilled and the high fiber content meant it was very satisfying. I’m not a huge fan of whole grain breads but this one was damn tasty. Yes, I know I made a blunder in that all the food is pretty much the same color… but I don’t care!
